These are good and hold together, and taste a bit like hamburger, good with all the trimmings! Good with cheese if you are not vegan.
In 1Tbs of olive oil, saute 1/2 lb. of mushrooms, 1/2 onion, and 1 clove garlic, finely chopped first. Don't overcook. Add 1Tbs. wine or water.
Then in food processor or blender, grind 3/4 cup almonds or any nut. Then grind 1 cup rolled oats, and 1 slice whole grain dried or toasted bread. Add to above mixture. Season with salt, a little soy sauce, 1 tsp arrowroot or cornstarch, and 1/2 cup any veggie milk and add also 1/2 cup rolled oats, not ground, for a hamburger like texture. Mix, and form into patties, and brown gently in olive oil on both sides, until firm. If you don't like olive oil,use fresh pressed canola or other wholesome oils, not the unhealthy store bought cheap oils. These can be grilled, and freeze very well. Grease the grill first! If the above mix is too dry or too wet, just add more oats, or more liquid.
I recently tried these with walnuts. Makes them a little greasier feeling if you like greasy hamburgers. Actually close in taste to hamburger. I want to try them with peanut butter out of curiosity some time. The oats BIND the burgers, these do not fall apart like homemade bean and rice burgers do.
Black bean and brown rice burgers are however, very good, add any diced veggies and seasonings you like to the mix, using mashed beans with some left whole. Or press into a baking pan and use instead of meatloaf. they will however ooze a bit out of your bun if you apply too much pressure. You might wish to add a bit of oats and see what happens. if your mix is a little moist, that would certainly firm it up.
Since I make my soymilk, I have as leftovers from the process the bran. I mix this bran or fiber with processed rolled oats, diced veggies and either sautee in patties, or bake as a loaf. I personally like some curry powder in this mix. I used to use eggs to bind this, but oats are better and make it much tastier.
In the first recipe above, you can also added diced carrots, celery etc, if you like these in your veggie burgers. The mushrooms are important to the taste, but you can substitute for them if you wish I would imagine. Experiment. But keep the ground rolled oats!
