Hi all, my zucchini plant is doing pretty good this year. I am really loosing my taste for cooked vegetables, I just let asparagus rot, I didn't want it cooked etc. The solution of course is salads of some sort. I have some old teeth and it's kinda hard to chew brocolli, carrots and other veggies by dipping them into sauce of some sort, so began grating them.
The first zucchini experience, I grated it and put some homemade ranch dressing on it. Not bad, pretty good. This time I grated it with onion and fresh garlic, and then put a dressing of olive oil and raw apple cider vinegar, salt to taste and a bit of stevia, as I like slightly sweetened vinegar dressings. You could use a bit of organic sugar instead. I used 1/3 olive oil and 2/3 vinegar. TO DIE FOR!!!!!! This is SO GOOD! I had no idea my whole life, because zucchini slaw isn't something you see much at least where I have ever lived. If you are one who doesn't like cooked zucchini, you should like this.
I am going to try a similar experiment now with the yellow crookneck squash, with fresh onion and bell peppers. the colored ones were recently on sale so I bought one of each, red, yellow, and orange. If my corn isn't too old I may try a raw corn relish.
